SURPRISE SANDWICH SPREAD -
Great recipe if you have extra eggs on hand
Recipe adapted by our dietitian.  Original recipe provided by one of our clients.

Ingredients: 
8 oz block of fat-free cream cheese
3 Tbsp onion, chopped
3 Tbsp green bell pepper, chopped
3 Tbsp chili sauce
½ cup pecans, chopped
1 hard boiled egg, chopped
4 egg whites, chopped

Directions: 

In a small mixing bowl, combine the cream cheese and chili sauce.  Stir well until the two ingredients are thoroughly combined. 

Next add the onion, green bell pepper and pecans.  Mix well with the chili cream cheese combination.

Finally, stir in the chopped eggs.

Yield:   6, ½ cup servings

Nutrition information per serving: 134 calories, 10 g protein, 6 g carbohydrate, 8 g total fat with 1 g saturated fat, 38 mg cholesterol, 1 g dietary fiber, 401 mg sodium

 

ANY CEREAL MUFFINS – Great recipe if you have extra boxed cereal on hand
Recipe adapted by our dietitian.  Original recipe provided by one of our clients.

Ingredients: 
2 cups of any low sugar, high-fiber cereal, such as Kashi Go Lean®
1 cup water
1 cup oat bran flour
1 ½ cups whole wheat pastry flour
½ cup brown sugar, packed
1 cup Splenda® or Altern (Wal-Mart brand) Sweetener
4 tsp baking soda
½ cup canola oil
½ cup egg substitute
2 cups low-fat buttermilk
1 ripe banana, mashed

Directions: 

Preheat oven to 400°F.

Boil 1 cup of water.  Remove water from heat, add cereal and allow to rest while mixing remaining ingredients.

In a large mixing bowl, combine whole wheat pastry flour, oat bran flour, baking soda, brown sugar and Splenda®.

In a medium-sized bowl, mash the banana well.  Combine egg substitute, canola oil and buttermilk with the banana. 

After the cereal has cooled, add to the moist ingredients.

Combine moist ingredients with dry ingredients.

Pour 1/3 cup of batter into muffin tins.  Bake for about 22 minutes.

Yield:   2 dozen muffins

Nutrition information per muffin (based on Kashi Go Lean Cereal®): 119 calories, 4 g protein, 18 g carbohydrate, 5 g total fat with 0.5 g saturated fat, 0.8 mg cholesterol, 2.5 g dietary fiber, 250 mg sodium.
